Chop the garlic and mix with the spices and liquids.
Add the meat and marinate for at least 30 minutes (I left it overnight)
Cook it in the oven at 180°C covered with tin foil for about 2 hours.
Meanwhile boil or roast the sweet potatoes. I usually stab them with a knife and cook them for around 5 minutes in the microwave, covered. And then place it with the roast in the oven, covering them with the jus from the meat after it's been cooking for a while.
Uncover and cook for as long as both meat and veggies need to get a little crispy, basting every 5-10 minutes.

You can serve with some nice bread with olive oil, cilantro and chilli.
